Article 1
Title

Olive varieties
1. Production area
1. Article 4
Cultivation
1. The environmental conditions and cultivation of olive groves for the production of extra virgin olive oil in art. 1 may be as traditional or typical of the area, however, which could give the olive oil and derived quality specifications.
2. The planting distance, types of farming systems and pruning should be those traditionally used or otherwise, which will not change the characteristics of olives and oils for the protected designation of origin under Article. 1.

4. The harvesting of olives for the production of extra virgin olive oil with a designation of origin under Article. 1 must be made directly from the plant by hand or by mechanical means.
5. For the extraction of extra virgin olive oil in the art. 1, are allowed only physical and mechanical processes to ensure the production of oil without any qualitative change in the characteristics contained in the fruit.

Article 6
Consumer Features

2. When ready for consumption in the extra virgin olive oil PDO Terra di Bari "accompanied by the geographical" Bito "must have the following features:

Taste: fruity with a slight hint of fresh herbs and bitter and pungent;

maximum total acidity expressed as oleic acid, by weight, not exceeding 0.5 grams per 100 grams of oil;

K 232: <= 2.40%;

K270: <= 0.180%;

total triglycerides <= 0.20.

 

3. When ready for consumption in the extra virgin olive oil PDO Terra di Bari "accompanied by the geographical Murgia of Trulli and Grotte," must have the following characteristics:

color: yellow gold with green reflections;

Bouquet: fruity nose;

Taste: fruity with a hint of fresh almonds and bitter and pungent;

maximum total acidity expressed as oleic acid, by weight, not exceeding 0.6 grams per 100 grams of oil;

Panel test score> = 7.00;

peroxide number <= 15 MeqO2/Kg;

K232: <= 2.40%;

K270: <= 0.180%;

total triglycerides <= 0.20.

 

4. Other parameters not specifically cited shall comply with current EU regulations.
5. In each country the oil Consortium identifies and kept in ideal conditions a large number of representative samples of the oils referred to use as reference standards for the conduct of taste.

Article 7
Designation and presentation
1. The protected designation of origin under Article. 1 is forbidden to add any description not expressly provided for in this "guideline" production, including the adjectives: "Fine," "Chosen," "Selected", "Superior."
2. E 'permitted the use of true names, company names, brand names, provided they have no meaning praise or are liable to mislead the consumer.
3. The use of company names, estates, farms and their geographical location, and reference to the packaging company in the association of olive or olive-growing holdings located in the air or on the job of production is allowed only if the product was obtained exclusively from olives harvested in the olive groves belonging to the company and if the mills and packaging has taken holding it.
